Healthy salad from the middle east low in calories and rich in vitamins yet filling. Fattoush Salad is a Levantine bread salad made from toasted or fried pieces of pita bread (khubz 'arabi) combined with mixed greens and other vegetables. The combination of lemon and sumac really packs a punch.

Honey 60 ml
Pomegranate Juice 60 ml
Lemon Juice 30 ml
Cherry 100 gms
Lettuce 2 Cups
Pistachio 30 gms

Instructions

Step 1: Toast Pita Bread

Take pitas, cut them into triangles and drizzle with olive oil. Toast the breads in the oven till they turn golden and crispy. Set aside

Step 2: Cook the Chicken

Season Chicken with the Jamaican Jerk seasoning. Put half the olive oil in a pan and cook the chicken thoroughly for 10 minutes. Shred the Chicken into small pieces and let it cool.

Step 3: Prepare ingredients for dressing

Cut Cherry Tomatoes into halves. Slice the onion and cucumber. Chop the Parsley and Spring Onion greens. In a large serving bowl add a clove of fresh garlic been finely minced. Then add in sumac and squeeze in the lemon juice. Whisk while drizzling in olive oil. Season with salt and pepper.

Step 4: Add Peppercorns

Add Peppercorns at this stage.

Step 5: Blend the liquid mix

Blend the mix using a hand blender.

Step 6: Add Olive Oil

Slowly drizzle in the olive oil while the blender is on.

Step 7: Crumble the Goat Cheese

Bust up the Cheese using a fork to get finer pieces for your salad.

Step 8: Prepare the salad

Throw some spring greens into a large bowl.

Step 9: Toss other ingredients

Toss Cherries and Goat Cheese into the mix.

Step 10: Add Pistachios

Just Add Pistachios

Step 11: Drizzle with the dressing

And right before serving, drizzle with a few spoonfuls of the pomegranate honey dressing or add a sinful portion to quench your tangy tongue.
